Homemade Eggnog

"What are the holidays, without all the traditional goodies?"

12 eggs
11/2 cup sugar
1 quart of cream
Vanilla to tast pinch of nutmeg Separate eggs at room temp.

Beat yolks until creamed with about half of the sugar. Beat the whites until peaked, then add the other half of sugar. Beat the cream until stiff. Then fold all together. Add vanilla and nutmeg to taste - but remember a little goes a long way! Place into containers and refridgerate for at least one day. Shake before serving.

Shelves ladden with goodies


Stuffed Sweet Potato Recipe

'Stuffed Sweet Potatoes', are perfect for the upcoming holidays. The recipe uses three ingredients (marked with an asterik) which can be purchased in the store.

Ingredients:

6 medium sweet potatoes, washed
1/4 cup Kate's Homemade butter*, softened
1/4 cup local Connecticut Honey*
1 tsp. salt
1 8-oz. can crushed pineapple, drained
1/4 cup Sweet Valley Farm syrup*
1/4 cup dark brown sugar

Preheat oven to 350'F.

Place sweet poratoes on a baking sheet and cook for 60-75 minutes or until tender. Remove from oven and let cool. Once cool, cut each potato in half, lengthwise, and remove potato meat, keeping the shells intact.

Bring oven temperature up to 375'F.

Place potato meat in a large bowl and mash slightly. Add butter, honey and salt and mix well. Stir in pineapple. Spoon mixture back into potato shells and bake for 15 minutes or until heated through and hot.

In a small saucepan, over low heat, combine pancake syrup and brown sugar. Cook for 3 to 5 minutes or until sugar melts. Serve drizzled over sweet potatoes.

Makes 12 (1/2 potato) servings.

Giff's Original
Stuffed Mushrooms

Ingredients:

  • 12 Large mushrooms
  • 6 teaspoons Giff's Original Jalapeno Pepper Relish
  • 12 teaspoons frozen spinach souffle, thawed

Directions:

Wipe mushrooms with paper towel. Arrange on baking sheet

Fill each mushroom with 1/2 teaspoon Giff's Original Jalapeno Pepper Relish and 1 tablespoon spinach souffle.

Bake in 400° oven 10-15 minutes or until light brown.

Serve as appetizer or entree.
